I have been baking sugarless treats for friend and family for a while and am quite enamoured with it. The harmful effects of sugar go way beyond empty calories. Added sugar is so unhealthy that it is probably the single worst ingredient in the modern diet. Contrary to popular belief eating healthy can be delicious and satisfying. This sugarless and fat free cake is almost too good to be true and I baked it last week for an elderly friend’s 70th birthday. It is a beautiful golden colour filled with dried fruits, almond meal and fresh orange juice instead of butter and sugar, and transforms into a rich and decadent fruit cake.
Ingredients: 100gms each of dried apricots, mejdool dates, golden raisins and almond meal; juice from 3 fresh oranges ( about 1 cup); ½ tsp vanilla essence; rind from 1 lime, grated; 100 gms sooji, roasted for 10 minutes in the oven at 100 Celcius; ½ tsp baking powder.
Soak apricots in ½ cup warm water overnight. Next day stone and boil apricots till thick. Cool and cut into small pieces. Crack the seed and add the kernels to the apricots. They are delicious. Remove the seeds from the dates and cut into small pieces. Wash and chop raisins too. Mix all the ingredients together. The batter should be a thick barely pouring consistency. Pour into an oiled pan lined with baking paper and bake in a preheated oven ( 10 minutes) at 225 Celcius for 35 – 45 minutes till golden or until skewer inserted in centre comes out clean. Cool and un mould and eat it yourself or give it to a friend.
NB: Every oven varies, so the baking may take more or less time.
