Hariette’s Easy Feta Brunch Bake

Christmas is a time when I like to try out new recipes for my guests and this year I came across quite a few, from family and friends.  It is an easy baked dish which was given to me by my school friend Hariette who lives in Canada.  I got to know Hariette when I was in the boarding for a spell, years ago and we had a lot of fun together when school was done and we were left to out own devices.

We met after four decades in Mangalore in October at our High School Reunion.   All of us were asked to bring some item as a contribution to a Reunion Scrapbook and Hariette gave us three easy and delicious sounding recipes.  Last week I had a party for our non christian friends and this was a big hit.  In fact the last guest scraped the dish clean and wished he had come earlier.  Thank you Hariette for this easy and delicious Feta Brunch Bake which will remind me of you whenever I make it.  Cheers to you and cheers to me!

The Recipe:


1 large bell pepper, chopped or half red and half yellow. ( I used green, red and yellow); 1 bunch spinach, chopped (without stems); 2 corn on the cob,(seperate corn); 12 eggs, beaten till frothy; 8 oz (or less) crumbled feta cheese; 1 large onion, chopped; a little each- fresh parsley, dried dill weed, oregano, thyme; dash of ground pepper.

  1. Cook spinach in micro on high for 5 minutes ( or steam)
  2. 2.  Preheat oven 400 Degrees F
  3. 3.  Grease a deep baking dish.
  4. 4.  Add all ingredients to beaten eggs.  Pour into prepared dish and bake for about 1 hour ( or till done) and it is a little brown on top.
  5. 5.  Let it stand for 15 minutes before cutting.
