Chickpea Cucumber Sesame Salad

As a family, we have always loved salads, The simple ones that are easy to make or the elaborate ones that require a lot of ingredients and preparatory work like Russian Salad. As I grew older, and my priorities changed, I came to appreciate the simple, tasty, easy salads like the Quick Cucumber Salad featured here. I could eat a whole bowl of this anytime during the day. It is also low calorie and a very healthy snack or accompaniment to any meal you care to make.

The Recipe:

2 medium cucumbers; a few sprigs coriander leaves; salt to taste; 1/2 tsp white sesame seeds; 1/2 tsp black sesame seeds; 1 tbsp light soy sauce

Roast sesame seeds seperately and keep aside till required.

Wash cucumber. Cut off the ends and cut cucumber in half. Remove seeds and dice the cucumbers.

Add all ingredients, except the sesame seeds to a large bowl and gently mix. Add salt only if required. Scatter the sesame seeds on top before serving. I used coconut shells to serve the salad and it looked very attractive on my table. Your Quick Cucumber Salad is now ready to eat.
