Akki Rotti Mangalorean Style

Akki Rotti is a breakfast item unique to Karnataka, India and a popular dish in Mangalore.  Akki Rotti means “rice bread” in Kannada and is made of roasted rice flour which is mixed with salt and water and lightly kneaded  to form a firm, soft dough.  Chopped onions, carrots, dill & coriander leaves, cumin and sesame seeds can also be added. We always looked forward to Friday’s as our Mother usually made Puttu (another South Indian Rice Dish) or Akki Rotti for breakfast.  She used to wash, dry and pound the rice ( actually the maid did this) and then carefully roast the rice in small batches, cool it and store it for use in the kitchen.  We had to help with the roasting and I must say it was a tedious process.  Nowadays, roasted rice flour is readily available and if it is not, I bake the unroasted rice flour in the oven until the right texture is achieved and then make my Puttu or Akki Rotti. We always had it with ghee and sugar and it is something I enjoy even today, as an adult.  However those who prefer  Chutney could eat it with that.  I also serve it with fried eggs, sunny side up where the yellow is cooked (unlike in MasterChef) and has a skin over it.

The Recipe For Akki Rotti Mangalorean Style

Ingredients:

2 cups rice flour

1/2 grated carrot

coriander leaves chopped

minced onion and spring onion

1/4 inch grated ginger

1 green chilli, minced

2 turmeric leaves/baking paper

salt to taste, oil

Method:

Add the above to 2 cups roasted rice flour and mix together.

Knead with 1 1/2 cups warm water (add water a little at a time) and salt to

taste (1 tsp) to a soft dough.

Divide into 10 equal sized portions.

Cover with a wet cloth until cooking time.

Take a piece of baking paper/turmeric leaf large enough to flatten the Akki

Rotti.

Place one portion on the baking paper/turmeric leaf and flatten with your

palm to desired thickness.

Transfer to heated, oiled pan and cook on medium heat till done.

Serve hot with Coconut Chutney or ghee and sugar. Yum!
