Oven Toasted Milk Powder Panna Cotta For Two

A silky Valentine’s dessert with a whisper of nostalgia

I’ll never forget the first time I had Panna Cotta. It was years ago — so creamy, smooth and utterly luscious. I felt like the Cheshire Cat — cheerful, satisfied, almost vanishing into myself to savour that dreamy flavour.

In those days we always had cream, carefully collected from boiled milk at home. Panna cotta became our Sunday treat for the children — simple, elegant, and made with love.

As new desserts came into our lives, panna cotta quietly slipped into the background.

But recently, I stumbled upon a toasted milk powder version — warm, nutty, deeply comforting — and my taste buds tingled in anticipation.

Why not serve it to my spouse this Valentine’s Day?

And so I shall!

The Recipe:

Toasting Milk Powder in the Oven (Best for Even Colour)

How to Toast Milk Powder in the Oven

Method:

Preheat oven to 160°C (low heat)

Spread milk powder thinly on a lined baking tray.

Bake 5–12 minutes.

Stir every 2–3 minutes for even browning.

Remove once pale golden and nutty smelling.

Watch carefully — it goes from golden to burnt quickly.

Cool completely before using.

Panna Cotta With Milk

Ingredients:

1 cup (240 ml) fresh cream (whipping or heavy cream)

½ cup (120 ml) milk

3 tbsp full-cream milk powder

2½ tbsp sugar (adjust to taste)

¾ tsp gelatine powder

1½ tbsp water (to bloom gelatine)

¼ tsp vanilla extract

Tiny pinch of salt

Optional Toppings

Fresh strawberries or raspberries

Watermelon Hearts

Strawberry coulis

Toasted almond slivers

A drizzle of honey

Method:

1. Toast milk powder. Cool.

2. Bloom the gelatine

Sprinkle gelatine over 1½ tbsp water. Let it sit for 5 minutes until spongy.

3. Heat the cream mixture

In a saucepan, combine cream, milk, sugar, toasted milk powder and salt. Heat gently, stirring, until sugar dissolves. Do not boil.

4. Add gelatine

Turn off heat. Add bloomed gelatine and stir until completely dissolved. Stir in vanilla.

5. Strain (optional but recommended)

Strain the mixture for extra smoothness.

6. Set

Pour into heart shaped containers. Refrigerate for at least 4 hours or overnight.

To serve:

Dip moulds briefly in warm water and unmould, or serve directly in glasses. Garnish as desired.

Serving Suggestion for Valentine’s Day

Top with watermelon hearts or strawberries and a tiny drizzle of honey. Scatter a few toasted almond slivers for texture. Serve chilled with a quiet smile.

Panna Cotta With Water

Ingredients:

1 cup (240 ml) cream

½ cup (120 ml) water

4 tbsp toasted full-cream milk powder

2½ tbsp sugar

¾ tsp gelatine

1½ tbsp water (for blooming)

¼ tsp vanilla

Pinch salt

Method:

Heat cream + water + sugar + toasted milk powder gently. Follow the same method as above.

Add bloomed gelatine. and vanilla. Strain. Chill 4 hours.

It’s such a beautiful way to say love — not loud, just creamy and thoughtful.
