I love making desserts and especially those that can be made in a jiffy. Last month when my husband and I visited Goa, I fell in love with this delicious pudding. It’s called Serradura or Portuguese Sawdust Pudding and is an old, old dessert from the days of the Portuguese in Goa, India. The word Serradura ( as I was told) is Portuguese for sawdust referring to the Marie biscuits that are crushed to a fine powder and used in the pudding. The other two ingredients are cream ( yes, you read it right) and some condensed milk. I added some vanilla and a few shavings of chocolate on the top for a good photographic image. All you need to do is layer cream am and biscuits in a lovely, tall jar or bottle and chill it for a few hours. And then you have the world’s easiest pudding to serve to friends or dig into yourself! I made it for a small gathering we had for Christmas and it was as one guest said- a melt in the mouth concoction of heaven on a plate!

The Recipe For Easy Christmas Pudding/ Serradura / Portuguese Goan Sawdust Pudding :

600 ml whipping cream

4 tbsp condensed milk ( use more if you have a sweet tooth, it’s all about taste)

25 marie biscuits

1 tsp Vanilla essence

1 tsp chocolate shavings for the last layer

The Method For Easy Christmas Pudding/ Serradura / Portuguese Goan Sawdust Pudding:

Chill beaters and bowl in the refrigerator for 1 hour. Whisk cream, vanilla and condensed milk ( it took me 20 minutes by hand) to just before the peak stage. Crush biscuits in a blender or use a rolling pin. I put them in a zip lock bag and enjoyed bashing them up to a fine powder.

Take a glass jar and start with a layer of cream followed by some of the Marie biscuit powder . I used about 5 biscuits per layer. Repeat until all the cream and biscuit powder is used up ending with a layer of cream on top. Garnish with some chocolate shavings and a sprinkling of Marie biscuit powder. Chill overnight and serve cold. It’s a wonderful end to a dinner party and your guests will thank you for it.
