Sugarless Sticky Date & Banana Pudding

Sugarless Sticky Date and Banana Pudding was really a bit too sweet for my palate.  In fact I felt a bit sick after eating it at a get together here in Kuala Lumpur.  Maybe because I indulged in too many desserts that day.

Anyway, while going through recipes on Pinterest I came across this recipe which sounded good. So I hastily scribbled it down on a piece of paper. Those were the days when I was a novice on the computer and words like ‘cut’ and ‘paste’ were Greek and Latin to me.  I tweaked it to suit our tastes and got a dessert that’s good enough for any occasion. And when I served it at some of our dinner parties, my guests were quite amazed at how good it was. And some even sheepishly asked me for the recipe.

Why don’t you try it out for yourself over the weekend and enjoy a guilt free delectable dessert?

The Recipe For Sugarless Sticky Date & Banana Pudding

The Ingredients:

3 eggs; 2 large very ripe bananas; 4 dates, pitted; 1 cup low fat milk.
The Method:
Blend all ingredients to a thick cake like batter.  Pour into oven proof dish and bake at 200 C in pre heated oven for forty minutes or until skewer inserted in middle comes out clean. I baked them im some oven proof mugs that were given to me a long time ago.
A simple, deliciously quick dessert to satisfy the sweet tooths.
