When my sister in law visited Kuala, it was the perfect opportunity to visit one of our favourite restaurants La Bodega in Bukit Bintang, Kuala Lumpur. We decided to order Spanish food and each of us chose one dish which meant we got to taste different things. I chose Gambas Al Ajillo without a clue as to what it was. When it arrived, we were absolutely fascinated with the presentation and aroma and couldn’t wait to try it out. It turned out to be shrimp/prawns fried in garlic and olive oil with chilli and parsley thrown in, accompanied by crisp rounds of toasted bread ( and I could eat bread any time, any where), so this made my day. The best part was when I googled the recipe and found out it was so easy to make. As always I read a few versions before making my own.
The Recipe:
15 tiger prawns, devein, leaving tails ; 5 fat cloves of garlic, sliced; 50 ml olive oil ( I reduced it); 1 dried red chilli; salt to taste; minced spring onions for garnish ( can use coriander too).

Wash prawns thoroughly and pat dry on kitchen paper. Sprinkle with salt to taste. Heat oil in a clay pot if you have one. I do not, so used an ordinary pan. Add the garlic and stir fry for 30 seconds. When it begins to brown, add the chilli and the prawns maintaining high heat all the while. As soon as the prawns change colour ( about 2 minutes) remove, garnish with spring onions and serve very hot with a green salad and crisp, crusty bread which you dip into the olive oil and eat. Would love to eat this every day!!
