Easter Menu/ Greek Lemon Rice/Honey Soy Chicken Wings/Tzatsike/Tiramisu

This is the first Easter that my family and I are housebound and will be attending church online. I wonder how long it will take and how the rest of the world is faring. Luckily , thanks to the internet we are able to keep in touch with each other and even host games and cooking shows and other activities with the use of internet tools. I couldn’t even imagine doing this 25 years ago. So this Easter will be celebrating at home with family and friends online. Let’s celebrate the Risen Lord!

Here is an easy Easter Menu that anyone could make with ingredients most people have in their fridge. Let’s cook up a storm and go international this year!

Greek Lemon Rice

The Recipe

2 cups basmathi rice, wash and drain

1 tbsp olive oil

1 cup, sliced onion

2 medium size lemons, juice, zest of 1 ( I prefer to use just 3 tbsp of lemon juice to keep it tangy)

2 cups chicken stock (an absolute must. I attempted this once with just water and it was mushy and sour)

1 tsp salt or more to taste

handful parsley, chopped ( I used coriander leaves)

3 cloves garlic, crushed

Method:

Heat oil on medium heat, add onions. Cook till transparent. Add garlic and fry golden brown. Add rice and gently stir to coat all grains. Transfer to rice cooker, add stock, lemon juice and salt to taste. When done fluff and stir in parsley and zest. Serve hot with Tzatziki and Honey Soy Chicken Wings

Tzatziki

The Recipe:

1 medium cucumber, grated with skin, strain

2 cloves garlic, crushed

1 cup curds

1 tbsp red wine

½ tsp pepper

1 tbsp olive oil

Method:

Whisk all ingredients except cucumber. Fold in cucumber and serve cold.

Honey Soy Chicken Wings

This is another very simple recipe to go with the Greek Lemon Rice and Tzatziki, made with odds and ends in my refrigerator and which I will be making again this weekend. It is so delicious that one can go on eating it without stopping. The recipe was given to me by a Chinese friend.

The Recipe:

6 wings, washed and trimmed

½ tbsp thick soy sauce

1 tbsp honey

salt to taste

½ tsp pepper powder

Method:

Marinade chicken wings in rest of the ingredients 30 minutes. Grill at 230 Celsius or 440 F for 7 minutes each side. Boil remaining marinade for a minute and pour over grilled chicken wings. Serve hot, garnished with spring onions.

Easy Biscuit Tiramisu

This is a quick dessert that is a variation on the Italian Tiramisu that is so popular these days. Since none of us like raw egg in our desserts, we make this version that was given by a friend some years ago.

The Recipe:

125 gms cream cheese at room temperature

2 tbsp Coffee Liqueur

1/2 tsp instant coffee granules dissolved in 1 tbsp hot water

2 tbsp condensed milk

3 Marie biscuit crumbs

3 grapes

3 pecans

3 melon balls ( use a melon scooper to get perfect rounds)

a pinch of cocoa for dusting ( I used dark cocoa)

1 tsp chocolate chips

Method:

Whisk cream cheese together with 1 tbsp liqueur and 1 tbsp dissolved coffee to a smooth consistency. Place the biscuit crumbs in a bowl in a layer and pour the remaining dissolved coffee and 1 tbsp liqueur over the crumbs. Pour the cream cheese mixture over and level it out gently. Garnish with the fruit, pecans, chocolate chips and cocoa powder. Refrigerate and serve cold.
