I have an incredibly sweet tooth and enjoy desserts of all kinds. I also love dried fruits and nuts. So I combined my love for decadent sweets into something quick and easy to make for Christmas- Easy Christmas Log / Date and Nut Log.  Do try it and let me know how you like it. It can also be made with Indian figs and tastes simply wonderful. Whenever I make Easy Christmas Log / Date and Nut Log, I have to carefully ration it out to my husband, slice by slice to make it last longer. Cheers to you and let’s sweeten the season with this simple, mouth-watering dessert.

Recipe For Easy Christmas Log / Date and Nut Log

Ingredients For Easy Christmas Log / Date and Nut Log

6 soft dates stoned

7 – 8 tbsp almond meal

silver leaf

Method For Easy Christmas Log / Date and Nut Log

Mash dates with a fork and add the almond meal tbsp. by tbsp. until a soft, firm dough. Shape into a small log. Roll tightly in baking paper and refrigerate overnight. Next day, gently roll in silver leaf and decorate with ribbons and berries. Cut into slices and serve.

NB: Keep adding the almond meal, until the required consistency is reached.
