Serita’s Republic Day / Independence Carrot Ring

 

My daughter made this some years ago and because of the colours involved felt this is the best recipe for 26th January Republic Day and  Aug 15th Independence Day ( India).   While going through my recipe files, I came across this awesome recipe that I somehow missed sharing.  It is a delicious one of course and requires some ingenuity to mould and serve.  The colours are vibrant and a visual treat as well as a feast for the senses.

The Recipe:

1 cake bundt pan oiled ; 3 cups cooked white basmati rice. Press into the cake pan and keep aside.

4 large carrots, grated, to use as decoration all around rice ring; 2 medium tomatoes sliced fine for decoration.

1 bunch spring onions (green part only), cut fine for decoration in the centre

For Filling: 250 gms chicken pepper sausages, cooked and sliced into rounds; 1 onion minced; 4 flakes garlic minced; 1 “ ginger minced; salt and pepper to taste; 2 tbsp oil for stir-frying.

For White Sauce: 1 tbsp flour; 2 tbsp oil; 1 cup low-fat milk; 1 chicken soup cube; salt & pepper to taste.

To Make The Filling: Heat the oil and stir fry onions, ginger and garlic until onions are transparent. Add the sausages and stir fry a minute. Add salt & pepper to taste and remove from fire. Cover to keep hot.

To Make White Sauce: Heat oil, lower flame, add the flour and stir fry till flour is light brown. Smash the soup cube and add to flour and mix well. Now stir in the milk very slowly until sauce is thick and smooth, without any lumps. Add salt and pepper to taste. Stir in the cooked filling and remove from the fire.

To Assemble Carrot Ring:  Unmould rice ring onto a large round serving plate. Pour the cooked filling and white sauce mixture in the centre. Arrange grated carrots and sliced tomatoes all around outer rice ring. Sprinkle spring onions in the centre. Can decorate with chopped tomato and sliced sausages if desired. Serve hot with accompaniments or as a main meal.
