Salad in a Melon Bowl is a recipe that I saw on my sister’s wall.  It sounded wonderful and as luck would have it, I came across the main ingredient while doing my weekly shopping. So I bought the melon and changed the rest of the ingredients. What I love about salads is the fact that you can add any ingredient that you like and mix and match and still come up with a delicious dish. Best of all, you can use the melon as a bowl to serve the salad once the fruit has been scooped out.

The Recipe For Salad In A Melon Bowl/ Easy Chicken Salad

Ingredients For Salad In A Melon Bowl/ Easy Chicken Salad:

1/2 a rock melon
250gms chicken breast cooked
  1/2 cup black cherry tomatoes
2 sticks of celery
one apple
1/2 cup curds/yogurt
2 tbsp pomegranate seeds
1/2 cup pink pomelo
herbs of your choice (I used mint leaves)
salt, and pepper to taste

Remove the seeds and scoop out the melon with a melon ball scooper. Keep the scooped out melon half to serve the salad later. Cut the cooked chicken into bite-sized pieces.  Cut the cherry tomatoes in half.  Cube the apple and soak in salt water for 10 minutes to prevent discolouring.  Drain and keep ready to use.  Peel the pomelo and remove the pith.  Whisk the salt and pepper with the curds to a smooth consistency.  Add all the ingredients and gently mix.   Serve in the melon bowl as an appetiser, snack, side dish, or main meal. It’s up to you.
