Mangalorean Style Green Masala Fried Fish

Mangalorean Style Green Masala Fried Fish or  Fried Fish With Green Masala is a really exotic dish and a must try for those who love fish. Fish marinated in green masala even for 15 minutes tastes so different to the usual red masala that is used to fry fish.

My Mum had a maid who would come everyday just to grind the various masalas she used in her daily cooking.  in those days every house had a large grinding stone in a corner of the kitchen that was used to grind various things.  As a child I remember hovering in the kitchen and watching her laying out the various ingredients. She also gave very specific instructions to the maid.  When the grinding was over, she would take a little bit between her fore-finger and thumb and feel it to see whether it was the right consistency.  Different curries had different masalas and they all had a different consistency. I loved seeing the different colours and sniffing the different smells.  To this day it is something that makes me feel nostalgic.

Nowadays, the era of the grinding stone has long passed and the efficient mixer- grinders have taken over. Masalas can be made in a jiffy and there is no need to hire a maid exclusively for this.

This particular Masala can be used to barbeque, fry and even bake fish.  I have tried all of them and can’t make up my mind which one is my favorite because I love them all. Make some extra masala and store it in your refrigerator for one of those lazy days when you don’t feel too energetic.  That’s what I do, so I always have something to work with.  Happy Cooking! And I do hope Mangalorean Style Green Masala Fried Fish or Fried Fish With Green Masala will be as popular in your house as it is in mine.

The Recipe For Mangalorean Style Green Masala Fried Fish

500gms fish fillets, wash and drained; oil for deep frying or sallow frying or pan frying.  It’s up to you; 3 tbsp fine semolina/sooji

For the Green Masala:

½ cup coriander leaves; ½ cup mint leaves; juice of 1 lime or ½ lemon; 1 green chilli; ½ tsp pepper corns; 5 cloves garlic; 1 inch ginger; 1 medium onion; 2 cloves; 2 cardamom; 1 inch cinnamon; 1 tsp salt

Grind the above to a smooth paste.

NB: A Masala is a blend of spices and can be green, red, yellow or dark depending on the spices used.

Marinade the fish in this for a minimum of 15 minutes.  If there is any Masala left keep it in your fridge for another day. Roll the marinaded fish in the semolina ensuring both sides are coated.  Heat oil and deep fry, shallow fry or pan fry as desired. The oil should be really hot – heat until smoking, lower heat and add the coated fish. Fry for 3 minutes each side.  Bring heat to medium to maintain heat levels or your fish will be soggy. Be gentle while flipping the fish.  Drain on kitchen paper and serve hot.  The fish should be crisp on the outside and moist and succulent on the inside. Garnish with onions and herbs (optional) and serve hot. Enjoy your Mangalorean Style Green Masala Fried Fish/ Fried Fish With Green Masala
