My Mum was very health conscious and always telling us to eat healthy.   Mummy’s Old Fashioned Pancakes were  made with wheat flour and she used very little oil.  We ate them frequently because she made it often and we loved them any time of the day.

A year has passed and its Pancake Tuesday again. We ate a lot of Pancakes growing up and we just loved it. Once I got married however, I realized that my husband did not have as sweet a tooth as mine. So one day when I was feeling bored and wondering what to make for tea, I thought of using up some stale bread that was in my bread bin. I made them into Pancakes, It was a big hit and from then onwards we had our sweet indulgences and my husband had the savoury version. Here is the recipe for Mummy’s Old Fashioned Pancakes and I hope you love it as much as we do.

The Recipe For Mummy’s Old Fashioned Pancakes

The Ingredients:

½ cup wheat flour

1 large egg

1 tbsp sugar or more to taste

1tsp vanilla essence

Pinch of salt

1/8 tsp baking powder

1/8 tsp baking soda

1 tbsp oil

1 tbsp raisins

Method:

Whisk all ingredients except the oil and raisins to a smooth, thick batter. Add oil and whisk again.  Gently mix in the raisins.

Heat a pancake pan and lightly grease with oil. Drop tablespoons of the batter in the pan. Cook until bubbles begin to show up on the surface and gently flip over.  Cook 2 or 3 minutes till golden brown.

Serve hot with honey and bananas or Nutella or Jam.  It’s your choice.
