I should have posted this recipe in time for Pancake Tuesday, but I had other things to do. Anyway, Pancakes can be made anytime of the year and are a great morning or evening snack and also serve as a light dinner.
Mummy’s Old Fashioned Pancakes were made with wheat flour and she used very little oil. We ate them frequently because she made it often and we loved them any time of the day.
Pan Rolls or Coconut Pancakes For Shrove Tuesday are a sweet treat prepared by the Christian community in India for Shrove Tuesday or Pancake Tuesday or Fat Tuesday (Mardi Gras). They are thin, flat pancakes stuffed with freshly grated coconut and jaggery or sugar and flavored with cardamom.
This is a very simple recipe that you can make when you have lots of stale (old) bread in your refrigerator.
