I was on the prowl for some new recipes for rice a few years ago, when I came across Easy Lebanese Rice on Pinterest. I could hardly believe my eyes. All it needed was a few ingredients. I did not even have to write it down as it was so easy to remember.

Easy Lebanese Rice is a dish that complements so may dishes, so I started making it pretty often and especially when I was feeling too lazy to exert myself.  The pine nuts were a bit hard to find, but I kept at it and finally found it one day when I was not looking for it. So, I bought quite a bit and kept it my fridge for all those lazy days when the urge to relax is overwhelming.

I added some onions and spring onions just to add some colour and extra flavour.  Keep in mind that Easy Lebanese Rice consists of just long grain rice, olive oil or butter and pine nuts.  The rest is up to you.

The Recipe:

The Ingredients:

1 rice cooker cup cup basmati rice, wash and drain

½ rice cooker cup roasted vermicelli

¼ rice cooker cup pine nuts

1 tbsp olive oil or butter or ghee

½ medium onion, sliced

1 spring onion, green part only, cut into finger sized lengths

Salt to taste

2.75 cups warm water

Coriander or mint leaves

Method:

Heat oil in pan. Lower heat to low and gently toast nuts to a golden brown. Take care not to burn them. Remove nuts and keep till required.

Increase heat to medium and in the same oil, stir fry the onions and spring onions for a minute. Add rice and gently saute to ensure all the grains are coated with the oil. Add vermicelli and gently mix.

Transfer to rice cooker, add salt and water and press the switch on. Wait for the light to change to indicate the rice is ready.

Fluff with a fork, transfer to serving plate and garnish with the toasted pine nuts and a smattering of mint or coriander leaves. Serve hot.
