Nowadays, every recipe I make reminds me of my Mum and the wonderful food she served up day after day, year after year. Ma’s Coconut Rice is one of these with extra special memories.

Ma’s Coconut Rice is a variation on the recipe for Coconut Rice that I had posted earlier on my blog. That had raisins in it. This one does not have anything but cardamom, cinnamon and coconut milk. We had the good fortune to eat it numerous times numerous times with gusto around our large family table. And it is from those bygone days that I get my appreciation for good food.
The Recipe For Ma’s Coconut Rice:

The Ingredients For Ma’s Coconut Rice:
2 cups basmati rice, wash and drain
1 cup coconut milk
3 cups water
1 onion sliced
½ teaspoon turmeric powder
1 tsp salt
2 tbsp homemade ghee or coconut oil
2 cloves
2 cardamoms
1 inch cinnamon
Method For Ma’s Coconut Rice:
Heat ghee in a non-stick pan and fry the spices for a minute. Add onions and stir fry till glazed. Add rice and gently stir fry till all the grains are coated. Transfer to rice cooker and add the salt, turmeric, water and coconut milk. Cook till the rice is done. Fluff with fork and serve hot. In the image, I served it with Mussels Mangalorean Style.
