Diamond Cuts
After Kal-kals, my favourite Christmas Eat used to be Diamond Cuts. I still love eating it and could finish a plateful in one sitting. It’s a while since I made them, since we have cut down on fried eats at Christmas. Anyway, to get back to Diamond Cute, they are called so because they are cut in diamond shapes and look really good. My Mum used to make tins of them to be given away. Once we were old enough to help, we all had to assist in rolling out and cutting the dough and then frying them. Of course we sneakily ate a few here and there and enjoyed ourselves thoroughly. In those days people seldom bought or ordered Christmas eats. Every family had their own unique recipes that were handed down in the family over the years. There’s no experience more enjoyable than gathering round the dining table, chatting and reminiscing and making your own Diamond Cuts.
The Recipe For Diamond Cuts:
1/2 kg wheat flour
50 gms salted butter
1 tbsp ginger garlic paste
1 tsp jeera seeds
1/2 tsp pepper powder
1/2 tsp baking powder
water for mixing
1 litre oil for frying
Method For Making Diamond Cuts:
Sieve the flour and baking powder together and place in large mixing bowl. Stir in the butter, pepper powder, jeera seeds, ginger garlic paste and mix well. Add enough water to form a soft, pliable dough. Knead for 10 minutes. Divide dough into five portions and roll each one into a thin chappathi. Cut into strips diagonally and then cut each strip into diamonds. Place on trays sprinkled with flour. Heat oil and fry in three or four batches until golden brown. Drain on kitchen paper. Cool and store in airtight containers. This is one of my favourites and well worth the effort spent.
