Date, Potato & Paneer Weekend Pulav
Sometimes while browsing the internet, I come across recipes that I’d love to try out myself. This was the case with my Date, Potato & Paneer Weekend Pulav. I did not bother to write it down, rather I chose to make my own version of it. It is an easy dish that can be made in minutes. While it’s cooking sit back and relax and serve with a Pachdi and Chicken or Vegetable Curry. Date, Potato & Paneer Weekend Pulav turned out much better than expected and I plan to make it again at one of my classes.
The Recipe:
300gms Basmathi Rice
600ml water
15 red dates
200gms paneer, cut into cubes
200gms baby potatoes, wash, quartered and parboiled
Pinch of turmeric
Salt to taste 1 tap
Marinade For Paneer:
1/2 tsp chilli power
1/2 tsp coriander powder
1/4 tsp jeera ( cumin seed powder)
Pinch of turmeric powder
Seasoning:
1 tsp ghee
1 tsp jeera seeds( cumin seeds)
1 star anise
2 dried bay leaves
Pinch of mace
1 black cardamom
2 green cardamom pods
2 cloves
1 inch cinnamon
Method:
Saute Paneer cubes for a couple of minutes in 1 tbsp ghee or oil. Remove and keep aside till required.
In the same pan saute the spices until aromatic on a medium flame. Add the potatoes and dates and gently saute for 2 minutes. Add paneer and mix. Add rice and mix gently. Transfer to rice cooker. Add 600 ml water and salt to taste. Put the rice cooker on and multi task or relax while it cooks.
Fluff and rest 10 minutes.
Serve hot and freeze the extra for another day.
Optional: Add 1tbsp ginger-garlic and 1 sliced onion in the rice cooker for additional favour.
