Mango Cashew Salad
This is a very refreshing, crunchy, colourful salad. Mango Cashew Salad is not only pleasing to look at, it satisfies your tastebuds like none other. I first saw a version of Mango Cashew Salad on Facebook. It appealed to me because of it’s bright colour and the promise of a delicious taste. I happened to have mangoes and cashew nuts at home, so I improvised on the other ingredients and made my own. That’s what cooking is all about. A delightful experience for all the senses. This salad has to be made minutes before it is served and eaten at one sitting since it does not keep well. The contrast between the juicy mango and crunchy cashew nuts is one that has to be experienced first hand. And with that, I rest my case.
The Recipe For Mango Cashew Salad
The Ingredients For Mango Cashew Salad
1 ripe, juicy mango, skinned and cubed
15 roasted cashew nuts (I used the bought ones since they are evenly browned)
1 red chilli, sliced (remove seeds)
1 sprig/stalk coriander (cilantro) leaves, chopped
1 tbsp fried shallots (available at the super market) or you can fry them to a crisp yourself
15 ml Aloe Vera Concentrate
Salt to taste
Method For Mango Cashew Salad:
Toss the Mango cubes, cashew nuts, sliced chilli, salt to taste and coriander leaves (cilantro) in a large bowl. Garnish with fried shallots and serve immediately
