Ginger Onion Fish

This is a recipe that popped up on my Facebook feed and I hastily scribbled the recipe on a scrap of paper that I always have in my kitchen drawer. The reason I liked it was because I had the sauce ingredients in my kitchen. Fish has always been a favourite with me and it looked quite easy and could be made in minutes. As usual, I changed some of the ingredients to suit what I had handy and the result was a recipe I make every month since I first made it.

The Recipe For Ginger Onion Fish

The Ingredients For Fish Marinade:

800gms dory fish cubes (By the time it thaws out, it reduces to about 500gms)

2 tbsp light soy sauce

1 tbsp Chinese Cooking Wine (optional)

1 tsp gingelly/sesame oil

pinch of salt and pepper

2 tbsp cornflour

For Onion Stir Fry:

1 tbsp olive oil

1.5 inch ginger, cut into thin strips

5 stalks spring onions, cut into finger lengths

1 green chilli, minced

3 cloves garlic, minced

1 tbsp oyster sauce

1 tbsp light soy sauce

1 tsp brown sugar

1/4 cup water

Method For Making Ginger Onion Fish

Wash and pat dry the dory fish. Believe me, it shrinks like anything and does not look like the pack you bought from the super market. Marinade the fish with the marinade ingredients – soy sauce, Chinese wine, gingelly oil, salt and pepper and cornflour. Heat the olive oil and stir fry the ginger and garlic on medium heat until fragrant. Add minced chilli, spring onions and gently mix. Add the oyster sauce, soy sauce, sugar and water and reduce heat to simmer. Add the marinated fish and cook for 5 minutes or less until the fish is transparent and sauce is thick. Serve immediately with plain white rice.

NB: I have also made this with coriander leaves instead of spring onions for a variation. Both turned out delicious.
