
Lazy Day Magic: Pressure Cooker Honey Chicken in Minutes



Some days, we all crave something delicious without spending too much time in the kitchen. Today was one of those days. I wanted comfort food with minimal effort, and my pressure cooker came to the rescue once again! This Pressure Cooker Honey Chicken is a beautifully glossy, sticky, and savoury-sweet dish that comes together quickly—perfect for when you’re feeling a little lazy but still want to eat well. A quick marinade, a few whistles, and a stovetop reduction later… we were rewarded with a mouth-watering meal.
Ingredients for the Marinade:
1 kg chicken (skinless, medium-cut pieces)
2 tbsp sweet soy sauce
2 tbsp honey
1 tbsp oyster sauce
½ tsp pepper
1 tbsp olive oil
Salt to taste
Method:

Marinate the chicken with all the ingredients above for 30 minutes.
Add 1/8 cup water to the marinated chicken and pressure cook for 3 whistles (about 5 minutes under pressure).
Remove from heat and let it rest for 10 minutes to allow the pressure to release naturally.
Transfer the contents to a stovetop pan and simmer until the liquid reduces and thickens, coating the chicken with a glossy glaze.
Serving Suggestion
Though the bright green broccoli in the photo was just for contrast, I actually served this dish with Konjac rice and a side of stir-fried veggies—broccoli, carrot, ridge gourd, and Malabar spinach (basale soppu). It made for a hearty, low-carb, and colourful plate.
