Dare to be different and make these Savoury Kal Kals. Guaranteed to please.

Have you ever heard of Savoury Kal Kals?  Neither had I, once upon a time. During the early years of our marriage, I would always make the traditional eats for our family. I wanted to teach our children our traditions and slowly introduce them to the familiarity of Christmas eats made year after year by my Mum and others hailing from the Mangalorean region. One year, my husband who was never a fan of sweet things, casually remarked ‘ Why can’t you make some Savoury Kal Kals for me?” I thought to myself, why not and made them especially for him, thereby creating a tradition in our family.  From then on, every time I made Kal Kals, I made a small batch of Savoury Kal Kals for him.

The Recipe For Savoury Kal Kals:

The Ingredients For Savoury Kals:

1/2 kg wheat flour

50 gms salted butter

1 tbsp ground ginger garlic green chilli paste ( 1 clove garlic, 1/4 inch ginger  and 1 small green chilli)

1/2 tsp baking powder

Water for mixing

Method For Making Savoury Kal Kals:

Sieve the flour and baking powder together and place in large mixing bowl. Stir in the butter and savoury paste  and mix well. Add enough water to form a soft, pliable dough. Knead for 10 minutes. Make small marble sized balls and press each one flat on a fork (see photograph) and roll into Kal Kals. Arrange on flat tray sprinkled with flour to prevent Kal Kals from sticking. Heat oil and fry in three or four batches until the Kal Kals rise to the surface and are golden brown. Drain and cool. Store in air tight containers.

Savoury Kal Kals are now ready to be served.
