Fried Rice was a hit from the day we first tasted it. That was decades ago.  There are so many variations of Fried Rice made with left over ingredients.  I have made Fried Rice in so many ways- with chicken or prawn or with eggs, just vegetables or a mixed version. It was always well received!

Food always brings back happy memories. Little did I know that those years growing up watching my mother cooking delectable food would shape my enthusiasm and passion as an adult.  My mother was an incredible cook and we all took great pride in bragging about her expertise in the kitchen.  Our friends loved visiting our house in the hope of eating something tasty or maybe just stopping by for a meal. There was always a lot of food in our house and our home always smelt of great food.

She loved trying out new recipes and did not limit herself to Mangalorean or Indian food alone.  We ate Chinese, Italian and various other cuisines growing up.  She subscribed to various magazines and we would eagerly turn to the recipe section as soon as it arrived.  Weekends were the days we tried out new recipes and planned for days ahead of time.

She was also an excellent baker.  Truly, we have never bought a cake from any bakery.  It was always baked at home.

I remember sitting around our large rosewood table enjoying superbly cooked food, swapping stories and talking till the cows came home.

I am a great cook (!!) today only because I had a wonderful role model at home.

Celebrating Mummy who made home cooking fun and created a sense of belonging with a Fried Rice recipe that continues to be enjoyed decades after we first had it.

The Recipe For Fried Rice Mummy Style

The Ingredients For Fried Rice:

2 cups left over rice

1 cup cooked mixed vegetables of your choice ( I used peas and corn which I always have in my fridge)

5 cloves garlic, crushed

½ inch ginger crushed

Left over roast chicken (about 200gms more or less)

3 eggs, scrambled- cook and keep ready

salt & pepper to taste

The Method for Fried Rice Mummy Style:

Heat 1 tbsp olive oil in a large wok. When hot, lower flame to medium and add the ginger- garlic and stir-fry for a minute or two.  Add the left over rice (I used Kichdi) and stir fry for a minute or two.  Add the cooked veggies and gently mix together. Add chicken and scrambled egg and mix again. Add salt and pepper to taste. Remove and keep in covered dish.

Can add prawns and spring onions too or a combination or different vegetables to make it a vegetarian dish. Everything and anything goes well with this Fried Rice recipe made with mostly left over ingredients.
