I don’t really eat as many apples as I should because I love our tropical fruits. Somehow this Apple Almond Flour Cake caught my interest when it popped up on my pinterest feed. So I saved the Apple Almond Flour Cake in my folder for a rainy day. While clearing out my refrigerator, I found some long forgotten apples in my fruit basket and immediately thought of making the Apple Almond Flour Cake. I was a bit skeptical, so made a small quantity to test it out. It smelt absolutely awesome and we gobbled the cakes in minutes.  My only regret is that I made so few. I want to make it again, but it remains a delicious dream for the time being.

Recipe For Apple Almond Cake

Ingredients For Apple Almond Cake:

1 cup almond flour

1/2 tsp baking powder

1/8 cup of olive oil

1/8 cup honey

1/2 tsp of vanilla

1 large egg

Zest of half an orange

1 medium apple, grated

Almond bits to decorate (I used a rolling pin to crush the almonds in a zip lock bag.  Makes it so much easier).

Method For Apple Almond Cake:

Preheat oven to 320F.

Mix all ingredients except apples and almonds.

Add the apples to the mixture and incorporate them well.

Spoon into large cup cake cases ( I used 3 inch paper cases)

Garnish with the almond bits.

Bake 15 to 20 minutes (the time depends on the size of your cases).

Let stand for 30min if you have the patience (I did not). Get ready to devour while you watch TV on the couch with your spouse!
