Instant Deepavali Coconut Barfi
Deepavali as it is known in South India or Diwali in North India is one festival I always look forward too even though we do not celebrate it. We have many friends who are gracious enough to give us delicious home made sweets and savouries and I drool in anticipation of those delightful treats. Deepavali or Diwali is the celebration of the triumph of good over evil, purity over impurity, light over darkness and is one of the most important Hindu festivals with over 800 million people celebrating the festival in various ways. When we were kids growing up in Bangalore we enjoyed going to all our friends houses whether we were invited or not to sample all the special dishes made during this time. Every year, our neighbors and good friends sent us the most incredible sweets and savouries that were home made and a labour of love, painstakingly planned over the preceding weeks. Once we shifted to Malaysia, we had the opportunity to experience a Malaysian Deepavali in all its splendour. Open houses with an array of food was a new experience for us and we loved learning about he different ways in which people celebrate Deepavali. Our friends, neighbours, colleagues and other well wishes continue to shower us with home made treats every year and I can honestly say that this is one of the things I love best about living in Malaysia.
My Mum made some of the best Coconut Sweet/Barfi I have ever eaten and was always making it for various sales and drives. While she did teach me how to make it I was always experimenting and trying out various ways to come up with an instant option and I finally nailed it without compromising on quality.
In honour of the festive season and for those with a sweet tooth, here is a quick and instant coconut barfi ( Indian Sweet) that you will want to make again and again.
Ingredients For Instant Deepavali Coconut Barfi
1 cup desiccated coconut
1 cup low fat, low sugar milk powder
1/2 tsp cardamom powder
1/2 cup almond meal
just enough condensed milk to mix
Nuts to decorate ( I used Chironji or Almondettes)
Method For Making Instant Deepavali Coconut Barfi
Mix all ingredients together to make a soft, smooth dough. Roll out to desired thickness on a baking sheet dusted with icing sugar. Cut into desired shapes and decorate with nuts of your choice. I used almondettes or chironji as it is called in India. Store in an air tight container for a few days at room temperature.
Needless to say this was a big success and got over the day I made it.
