Wedding Biriyani/ Bangalore Biriyani

Wedding Biriyani is typically Indian. It is very rich and special with loads of ghee and spices. And quite unlike any other dish served at weddings.  The best long grain rice is bought and carefully hoarded.  For the very special Wedding Biriyani. India is one of the few countries in the world that can boast of people from different backgrounds and religions.  Living together, enjoying and celebrating all festivals with the same enthusiasm as they celebrate their own. These differences provide India with festivals celebrated all year long.   In fact India is a subcontinent of nationalities.  We boast a wide variety of food that ranges from vegetarian to non- vegetarian. A lifetime would not be enough to learn about the different cuisines in India.

One of the most popular and sought after dishes is Wedding Biriyani. At one time, I was teaching how to make biriyani practically everyday. That is when I started exploring different recipes and where they came from.

Biriyani is an evergreen classic that really needs no introduction.   Indians unanimously love this rice dish. The deliciously complex blend of flavours, spices, and aromas in biryani have come to epitomise the zenith of Indian cuisine.  The dish originated quite far away and comes from the Persian word Birian, which means ‘fried before cooking’ and  Birinj, the Persian word for rice. This is a recipe that I absolutely love.

Wedding Biriyani / Bangalore Biriyani — Nora Aunty’s Recipe

This recipe is from my sister-in-law’s mother, the late Nora Soans. We have eaten many meals in her house and every one was super delicious. She told me that she got the recipe from a friend who catered for weddings. And yes, this is the Biriyani that is served at numerous weddings in Bangalore with a few variations depending upon the caterer and ingredients used. I have taught it to so many people from all over the world and the best part was when my sister-in-law requested the recipe after seeing one of my posts. You can use lamb (mutton as it is called in India). The cooking time varies however. It’s up to you to find your magical formula for Biriyani and make it a talked about meal whenever you make it.

The Recipe:

I kg chicken wash and cut into medium pieces; 3 rice cooker cups basmathi rice; wash and drain; 11/2 cups oil. I used 1/8 cup

Chop 1 large( handful) pod garlic, 2 inch ginger, 4 medium onions, 3 medium tomatoes, 25 leaves pudina/mint, 1 tbsp coriander leaves.
8 cloves, 4 cardamom, 1 stick cinnamon, 1 cup curds, 1 tsp chilli powder, 5 green chillies whole( can use more to taste);1 pinch orange food colouring ( optional).

Pressure cook for 3 minutes chicken, 2 of the chopped tomatoes, 2 of the chopped onions, 1/4 cup water and 1 tsp salt. Switch off and keep till required.

Heat 2 tbsp oil in a large dekshi. Add 5 of the cloves and half of the cinnamon and 1 of the chopped onions. Stir fry till brown and add remaining tomato. After 3 minutes add ginger, garlic, mint, coriander and whole green chillies. Stir fry a couple of minutes. Add chilli powder, curds, 1 tsp salt and the cooked chicken. Cook on high heat till thick and water evaporates. Keep aside till required.

Heat 2 tbs oil in another pan and stir fry remaining onion and spices on medium flame till onions are golden brown . Add rice and stir fry till grains are coated. Add 1 tsp salt 31/2 cups of the chicken stock.  Transfer to cooker.  Mix the orange food colouring with 1/8 cup stock/water and drizzle over the rice.   Close and cook till done in rice cooker.

Add the cooked chicken and remaining 11/2 cups stock and/water and close and cook again till done. Remove from cooker, cover and keep standing for 30 minutes. Gently mix together and serve hot garnished with boiled eggs.
