Once a year, I reserve the privilege of baking for myself. This year it was a Honey Mascarpone Cake/Easy Birthday Cake that came out perfectly golden brown, moist on the inside with loads of flavour. It was absolutely scrumptious and I baked it again on request from a friend. The original recipe is from https://anitalianinmykitchen.com/marble-cake/ , but I adapted it to suit my tastes- no sugar, a little honey instead and it was gorgeous. My family loved it and finished it in minutes. Thank you Rosemary for this marvellous recipe.

 Mascarpone is an Italian cheese from the Lombardy region, made by curdling milk cream with citric acid or acetic acid. It is a thick, double or triple cream, soft cheese with a very high fat content ranging from 60% to 75%. It is seldom used in Indian households and when I saw it at the supermarket, it was something alien to me. Forget about the astronomical price. Then I came across a recipe on the net many years ago about this lady who made mascarpone at home. I was really intrigued and made up my mind to do it myself. Since fresh milk is delivered to our doorstep, I collected the cream and when I had enough, made it myself.

Easy Home Made Mascarpone Cheese/ How To Make Mascarpone

 

The Recipe For Mascarpone Cake/Easy Birthday Cake

The Ingredients:

1/2 cup mascarpone

3 eggs

1 tsp vanilla essence

1/3 cup honey

1/2 cup low fat milk

1/4 cup melted butter ( salted)

1 3/4 cups wheat flour

2 tsps baking powder

extra honey for drizzling on top for those with a sweet tooth

 

Method For Making Mascarpone Cake/Easy Birthday Cake

Pre heat oven to 175 Celcius/350 F and grease a 9inch round pan.

Sieve the flour and baking powder and keep aside.  Whisk eggs and honey together till creamy. Add the mascarpone and whisk till creamy, then add the butter and vanilla essence and whisk to a smooth consistency. Add the sieved flour and milk ( at room temperature) alternately and gently mix to cake batter consistency. Pour into greased pan and bake for 40 – 50 minutes until golden brown and skewer inserted in the centre comes out clean. Cool completely, drizzle with extra honey and enjoy the experience of eating an Italian dessert in your home.
