Kothu Paratha brings back fond memories of my hostel warden in Madras when I was a Post Graduate student of psychology. She was an excellent cook and introduced me to many unusual dishes that I enjoyed sampling. One of them was Kothu Paratha which I tasted for the first time in her kitchen and carefully copied into my recipe book. Today it is a firm favourite. I was also surprised to see it every where on our visit to Colombo, a few years ago. Since I had some Lebanese bread in my refrigerator, I decided to make the most of it and here is the video link for it. By the way, if you like my recipe please do like my Facebook Page The Versatile Housewives and share it with your friends and family, Thank you very much.

Sri Lankan Kothu Paratha

The Recipe:

2 Lebanese bread, cut into bite sized pieces
1 medium onion, sliced fine
2 green chillies, minced ( can use less or more as desired)
1 tbsp crushed ginger ( 1/2 inch) garlic ( 3 cloves)
300 gms chicken fillets, cubed
1.5tsp Masala powder / of your choice
2 tomatoes, chopped
1 small bunch greens of your choice
2 large eggs
Salt to taste
1 tbsp olive oil
Coriander leaves for garnish

Heat pan on high and add oil. Lower flame to medium. Add onions and chillies and cook till onions are glazed. Then add the ginger garlic and stir fry till it smells good and is cooked ( a few minutes). Keep adjusting the heat as you cook. Next, add tomatoes and cook till soft and mushy. Add the salt and Masala Powder or chilli powder to taste as desired. Mix well. Now add the chicken and cook till done. Stir in the greens followed by Lebanese bread ( that’s what I had in my fridge) and give it a good stir. Add the eggs, mix well and keep stirring till cooked. Adjust seasoning and garnish with some chopped coriander leaves. Best of all, it can be eaten by itself.
