Ma’s Easy Masala Potato / Easy Potato Masala Mangalorean Style
Ma’s Easy Masala Potato / Easy Potato Masala Mangalorean Style is one of the dishes my Mum used to make whenever she made pooris- an Indian fried bread. As kids, we never liked anything grainy and so she used the barest minimum of ingredients and made sure they were crushed, ground, and powdered. It can be eaten with chappathis, parathas or bread and also used as a sandwich filling. It is also very quick to make and one of our comfort foods and the ingredients required are usually available in all households at any time. I like to serve it with pooris/puris or chappathis and also with curd rice. It tastes absolutely phenomenal for such a simple dish.
The Recipe For Ma’s Easy Masala Potato / Easy Potato Masala Mangalorean Style:
The Ingredients:
3 medium potatoes, boiled; 1/2 medium onion, sliced fine; 2 fat cloves of garlic, crushed; 1 tbsp oil; salt and chili powder to taste; 1 tbsp chickpeas /gram flour; 1/2 tsp roasted fenugreek / methi seeds, powdered.
The Method:
Heat pan on high heat with 1 tbsp oil of your choice. Add onions and stir fry till glazed. Lower heat and add garlic. Saute till it begins to brown. Add chili powder and salt to taste and mix together. Add potatoes and stir to coat. Add gram flour and mix well coating all the potatoes. Add fenugreek seeds powder, mix well and remove from heat. Serve hot.
