Easy South Indian Dosa/Masala Dosa

This is one of the first recipes my Mum taught us. Dosa requires a bit of practice to get it right. This is because the ingredients have to be prepared the previous day and fermented overnight. Only then will you get a thick, fluffy, airy batter. Every house has their own secret recipe which is guarded carefully. Dosas can be served for breakfast or a light dinner or even for lunch. I like to serve them with chutney or stuffed with potato masala. Did you know that the famous Masala Dosa was invented in Udipi which is a town close to Mangalore.

This  is a variation of the popular Easy South Indian food, which has its origins in the Tuluva Mangalorean cuisine of Karnataka. Made from rice, lentils, potato, methi ( fenugreek seeds), and curry leaves, it is served with chutneys and sambar, a lentil curry. All you have to do for a delicious Masala Dosa is stuff the rice crepe with potatoes and your dish is ready.

The Recipe For Easy South Indian Dosa/Masala Dosa:

The Ingredients:
1 measure boiled rice; 1/2 measure uddith/urad dhal ( black gram dhal); 1 tsp methi seeds ( fenugreek)

Method For Easy South Indian Dosa/Masala Dosa:
Wash and soak ingredients separately for 5 hours. Drain and grind rice and methi seeds together with 1/4 cup water to a smooth batter ( not too thick or thin). Pour into an air-tight container. Blend black gram dhal with 1/4 cup water to a fluffy consistency and add to the rice batter. Mix well, close lid, and leave to ferment overnight ( 8 – 12 hours). The next day add salt to taste and make dosas as in the video. Use a seasoned pan for the best results. Serve with Masala Potato ( which I posted last week) and Coconut Chutney.
