Mangalorean Brinjal Molee / Pan Fried Eggplant in Coconut Milk / Aubergine
Like all good children , we hated vegetables. My Mum went out of her way to entice us with delicious dishes. In vain, her efforts simply did not pay off. My children were the same. It was a nuisance getting them to eat their vegetables. Brinjals or aubergines or eggplants were high on their hate list. The only reason they ate it was because I camouflaged it with coconut milk. I also told them that it was fish. Since they loved fish, they happily ate it. Here is the recipe for Mangalorean Brinjal Molee which they now love.

Mangalorean Brinjal Molee / Pan Fried Eggplant in Coconut Milk / Aubergine
Mangalorean Brinjal Molee / Pan Fried Eggplant in Coconut Milk / Aubergine
Ingredients:
1 large brinjal sliced
1/2 onion sliced
2 green chillies, slit
pinch of haldi/turmeric
salt to taste
1/2 cup thick coconut milk ( first extract)
1 1/2 cup water
Masala Marinade:
1 tsp chilli powder
salt to taste
pinch turmeric
2 tbsp vinegar
Mix to form a paste and keep ready.
Method:
Slice brinjals thinly and soak in water to cover for 15 minutes with 1 tsp salt ( prevents browning) and 1/2 tsp baking soda ( to remove chemicals and pesticides). Boil onion, water, chillies and turmeric for 5 minutes and keep hot. After 15 minutes, drain brinjal thoroughly and marinade in Masala for 10 minutes. Pan fry with a few drops of oil till cooked on both sides. Add the fried brinjal to the boiled water and boil again for 1 minute. Lower to simmer and add the coconut milk. Remove from heat immediately. Season with fried curry leaves and onions. Serve hot with white rice, bread or chappathis.
