Biblical Chicken is one of the most surprising recipes that I came across while researching on foods during Biblical times.
Chicken was one of the meats included in Biblical diets. Below are the links for Biblical Chicken from two sites I visited before testing my recipe. This is a simple chicken dish that anyone would love. The oranges add zest and flavour to the dish. The almonds and pomegranate seeds add a crunchy texture. All in all Biblical Chicken is a dish that is both easy and pleasing to the eye and palate. Suitable for all ages. And worthy of every Christmas celebration.

Ingredients
Keeps up to 2 days under refrigeration. Freezes up to 2 months.
1 tbsp wheat flour
½ tsp Himalayan salt
½ tsp freshly ground pepper powder
500 gms boneless chicken breast, sliced
2 tbsp olive oil
3 tbsp almond slivers
For the sauce:
½ cup red wine
½ cup chicken stock,
½ cup orange juice
1 tsp grated orange zest
1 tbsp honey
1 tbsp raisins
1 stick cinnamon
1 ½ tsp cornflour mixed with 1 tbsp cold water
For the garnish:
1 orange, sliced thin with rind
Method:
Mix flour with the salt and pepper. Coat chicken with the flour.
In a large frying plan, heat the oil over moderate heat, add the almonds and cook gently until golden brown. Remove the almonds, drain on a paper towel and keep aside.
Add the chicken to the oil in the pan and stir fry until golden. Remove from the pan and keep aside till required.
To the same pan add the wine stirring well and bubble for 3 minutes to intensify the flavour, then add the stock, orange juice, zest, honey, raisins and cinnamon stick and cornflour mixture. Bring the sauce to the boil and add the chicken and cook till done. It takes about 5 minutes.
Arrange chicken in serving dish, decorate with sliced oranges and almonds. Serve hot.
