Christmas Scalloped Potatoes

Christmas Scalloped Potatoes  are part of  The Bethlehem Menu because potatoes are one of the most popular of festive foods.  Although not eaten during Biblical times, the other ingredients like milk and cheese were. They are thinly sliced potatoes and onions are layered in a cheese sauce and baked until tender, golden, and bubbly.

By the way it got its name from the Old English word “collop” which means “to slice thinly.”

I came across this many years ago at a party I attended during Christmas.  I have always wanted to make it and I finally got the opportunity.  Though a simple dish, this is one of the most satisfying and fast disappearing of all the dishes I have ever made.  Hope you enjoy it as much as we do.

 Ingredients:

1 tbsp butter

1 small onion diced

2 cloves garlic minced

1 tbsp wheat flour

1/2 cup milk

1/4 cup chicken stock

4 tbsp grated Parmesam Cheese

½ teaspoon salt

¼ teaspoon pepper

500 gms potatoes sliced about ⅛” thick

Salt & Pepper

Instructions:

Preheat oven to 350˚F.

Cheese Sauce:

To make the sauce, melt butter over low heat.  Add onion and garlic and cook until onion is soft, on medium heat for about 3 minutes. Add flour and stir fry 1-2 minutes.

Reduce heat to low. Mix milk and broth. Add to the pan, stirring all the while. The mixture will become very thick and smooth.  Bring to a boil over medium heat while continuing to stir.  Stir in cheese, salt and pepper. Remove from heat.

To Assemble:

Grease a 8 x 8 ‘ baking dish. Place ⅓ of the potatoes in the bottom and season with salt and pepper. Pour ⅓ of the cheese sauce over top.

Repeat layers ending with cheese sauce. Cover with foil and bake for 45 minutes.

Uncover and bake for an additional 35-45 minutes or until golden brown and potatoes are tender. Grill for 3-4 minutes to obtain a golden top. Garnish with spring onions- optional.

Allow to rest for 15 minutes before serving.
