Almond Angel Wings

Almond Angel Wings are delectable bites of cooked marzipan. I called them Angel Wings because to me they look like Angel Wings when arranged artistically on a plate.

Marzipan has been part of our Christmas tradition for as long as I can remember. As kids we used to stand around the table while our Dadda made the marzipan.  He shaped them into luscious fruits and we used recycled artificial leaves and stems ( from past treats) for decoration. The marzipan was carefully rationed out as it was an annual treat.  However, I always finished mine the same day and found some excuse or the other to gobble the rest.

Recently I came across a recipe for cooked marzipan which was eggless and used jaggery, so my Almond Angel Wings was born. It is a very addictive treat and one bite leads to another and yet another. Try it for yourself and see.

Almond Angel Wings

Ingredients:

2 tbsp ghee

1 cup almond meal

½ cup brown sugar or jaggery (palm sugar)

Method:

Heat pan on medium flame.  Add ghee. Next add almond meal and stir fry for a minute.  As soon as the ghee is absorbed add the jaggery powder or brown sugar and gently mix.  As soon as it begins to melt and come together in the centre of the pan, take it off the fire and cool a minute.  Press into moulds and serve on a pretty plate. These Almond Angel Wings are absolutely irresistible.
