Curry Leaf Chicken

Whenever my husband does the marketing, he comes back with really large quantities of ingredients not on my list.  Some years ago, he came back with extra large bunches of curry leaves and mint because it looked so inviting.  In spite of the fact that I have curry leaves and mint in my small garden!!!  Well, I had to use it up and so I made Curry Leaf Chicken with Mint Rice and a Cucumber Carrot Pachdi to go with it. Thank goodness for the internet and www.pinterest.com in particular. As usual I read through numerous Curry Leaf Chicken recipes and then made my own version of it.

Ever since, this Curry Leaf Chicken has made an appearance every now and then especially whenever my Curry Leaf Tree needs to be pruned. Curry Leaf Chicken is a lip smacking dish and you will be very pleased you tried it.
