Method For Besan – Chickpeas Flour Cookies
Place chickpeas flour, baking powder and sugar in a large mixing bowl. Mix thoroughly.
Whisk melted ghee, sugar, vanilla and water till sugar has dissolved. Pour the wet mixture into the dry ingredients and gently mix. Add chocolate chips and nuts and make a smooth dough. Do not knead too much. Mix till it comes together in a smooth mass. Make into portions- about 20 to 25 depending on size- and place 5 cm apart ( they expand while baking) on a baking tray lined with baking paper. Bake in a pre-heated oven at 175 Celcius /350F for 15 to 20 minutes. Let it cool in the oven. If you are like me and like your cookies on the harder side, bake for 5 minutes more. Store in an airtight container and then watch your cookies vanish in the blink of an eye.
