I forgot to schedule this post and it lay forgotten in my inbox until I discovered it today.  And so I am posting it with due haste.  Salted Orange Brownies should have been posted a year ago. Anyway, here it is.  As far back as I can remember, we never bought cakes. Even when growing up. We made them at home. Every cake was a learning curve. We planned and plotted for days and scrupulously selected the ingredients. And enjoyed making and baking and decorating it. This year I made two cakes for Nehru’s birthday- one for us and a different one for Nehru to take to the office. Salted Orange Brownies and the other (will blog about it some other time) turned out really well and I can’t wait for the next occasion to come around. Brownies have become an all time favourite with everyone and these Salted Orange Brownies are no exception.

Salted Orange Birthday Brownies

Ingredients For Salted Orange Birthday Brownies:

2 Cups whole meal wheat flour

2 Cups brown sugar (powdered)

1/2 tsp pink Himalayan salt

3/4 tsp baking powder

225gms salted butter at room temperature

4 Large eggs at room temperature

½ Tsp vanilla

½ Cup orange juice

Zest of 3 medium sized oranges

Orange food coloring as desired

Topping Salted Orange Brownies:

1 cup icing sugar

⅓ Cup orange juice

1 tbsp orange zest

Method For Salted Orange Birthday Brownies:

Preheat oven to 350 degrees F/175 Celcius

Whisk together the flour, sugar, baking powder and salt by hand until well combined.  Add the butter and mix till just combined. Whisk the eggs, vanilla, orange juice, and orange zest in a separate bowl.  Pour the egg mixture into the mixed flour and fold gently.  Transfer the batter into a greased and lined ( baking paper should hang out on opposite sides for easy un-moulding) 9inch square pan and tap gently to release bubbles. Bake in preheated oven 40-45 minutes until pale golden brown around the edges and firm to the touch in the centre.  Cool the brownies in the pan overnight. Add the topping the next day for best results.

Mi the icing sugar, juice, and zest until smooth. Pour over brownies and smoothen with knife.  Arrange thin slices of orange on top and add a few mint leaves for decoration. You can sprinkle  a pinch of salt on top if desired.

This cake not only looks spectacular, it tastes awesome and I wish I had made one for myself too.
