There are different ways of serving God. For us it has always been music and giving. We were encouraged to discover the light within us and to keep shining no matter what. We learnt the gift of service and the joy of giving from our parents. There was always some worthy cause to contribute to. I remember when I was 6 years old, my teacher handed me a form to give to my parents. My Dad took one look at it and said “Ask your Mother.” My Mum, after reading it said she would make 50 vadas and 50 pieces of coconut sweet (Coconut Sweet/Mummy’s Coconut Sweet) to be donated for my school’s Sports Day stalls to raise funds for something or the other. That’s the way it was for as long as I can remember. And Coconut Sweet/Mummy’s Coconut Sweet was always, only pink!
My Mum’s standard donation to church or school or causes was always Vadas and Coconut Sweet/Mummy’s Coconut Sweet. Growing up we got involved in similar activities and enjoyed them. Our Mum was the founder president of the YWCA in Mangalore until we left in 1983 and that involved us in a variety of activities , mainly singing in various choirs and serving whenever the opportunity arose. We were engaged in so many things, it’s impossible to list them all. Every single one required some kind of giving.
As we became adults each of us carried on contributing our talents in every way.

This being the month when Mothers are celebrated, I would like to share Mummy’s Coconut Sweet with you.
The Recipe For Coconut Sweet/Mummy’s Coconut Sweet:
The Ingredients For Coconut Sweet/Mummy’s Coconut Sweet:
4 cups grated coconut
4 cups sugar
½ cup water
1 tsp vanilla essence
3 drops cochineal pink colouring
pinch of salt
Method For Coconut Sweet/Mummy’s Coconut Sweet:
Bring water and sugar to boil. Make a one string syrup. Add grated coconut, pink colouring, vanilla and salt and lower to medium flame. Keep stirring till thick and mixture reaches soft ball stage. Grease a flat tray with ghee before starting. Pour the coconut barfi onto the plate and spread evenly. Cut into diamonds and wait for it to cool. Store in the fridge.
NB: One-thread consistency is when a single thread is formed (and does not break) when your forefinger and your thumb are pulled apart gently.
