I have always loved Lychees. Something about them makes me so excited whenever I spot them.  And today’s recipe is all about Lychee Coconut Water Mocktail. Coconut Water is another of my favourite drinks and I have a glass practically every day because I prefer them to fizzy drinks.  Getting back to the Lychee Coconut Water Mocktail, as usual I went overboard and bought far too many lychees for two persons.  I came home and put them in the refrigerator and forgot about them until a couple of days later. By then, the skins had shrivelled and hardened, so I had to use them up immediately. That’s when I decided to make a Lychee Coconut Water Mocktail and treat myself to one of my favourite fruits.

Growing up, we always enjoyed eating Lychees in summer.  My late Dad had a friend who kept us supplied with this awesome fruit faithfully every year.  It was something we all looked forward to.  We fell on the Lychees and could finish a large basket between the three of us.  The youngest sybling was too small anyway, so we chose to leave her out of our stealthy exploits.  Over the years, we have had Lychees in numerous ways- Lychee Juice, Lychee Souffle, Lychee Cheesecake, Lychee Salad, Lychee Ice Cream, Lychees with Cream and Lychees with various meats as well. And today as I mentioned earlier, it is Lychee Coconut Water Mocktail which is as good as any other drink, especially if you love Lychees.

The Recipe For Lychee Coconut Water Mocktail

Ingredients For Lychee Coconut Water Mocktail:

1 bunch of fresh lychees

250 ml tender coconut water

Method For Lychee Coconut Water Mocktail:

Wash and peel lychees carefully.  Remove the seeds. Place in a bowl and mash them with a fork.  Add the mashed lychees to the coconut water and serve chilled.

This is one of the easiest recipes to make.  You don’t really require sugar, since the lychees and the coconut are sweet enough for anyone’s palate.
