Dates Rava/Sooji/Semolina Cake
Dates are one of my favourite dried fruits and I always have a box of them in my refrigerator. I love baking with sooji (also known as rava and semolina) and was searching for recipes to make with dates. Why not a Dates Rava/Sooji/Semolina Ghee Cake, I thought to myself? I’m the sort who when the urge strikes, has to act immediately. So, I made an eggless, low sugar Date Sooji Cake to be given away for a sale. I also made two tiny cupcakes for us to sample. I loved it (who wouldn’t?) and I now have a new cake to share on my blog. Cheers!
Ingredients For Dates Rava/Sooji/Semolina Cake:
2 cups roasted semolina/sooji/rava
25 soft dates without seeds
1 cup water
2 tbsp milk powder
175gms salted butter at room temperature or 3/4 cup ghee
¼ to ½ cup brown sugar (I used ¼ cup)
2 tsp baking soda
3 tbsp almond meal
Ghee for greasing baking dish
Extra chopped dates and 1 tbsp almond nibs to scatter on top

Method For Dates Rava/Sooji/Semolina Cake:
Soak dates in 1 cup water for 30 minutes. Blend to a smooth mixture with 2 tbsp milk powder. Whisk the butter, sugar and blended dates until sugar has dissolved and the mixture is thick and glossy. Gently fold in the sooji/semolina/rava, baking powder and almond meal. Pour into lined and greased 9 inch square baking pan and scatter extra chopped dates and nuts on top. Bake at 175 Celcius/350 F for 40 minutes or until skewer inserted into the centre comes out clean.
NB: The reason I use ghee to grease my pan is because it gives an additional heavenly aroma to the baking cake and makes it absolutely irresistible. Using ghee also keeps the cake super moist.
