I remember how excited I was with my home made paneer, the first time I attempted it.  How To Make Paneer/Home Made Paneer is an old, old, practically ancient recipe of mine.  One that I have hoarded and cherished for years.  No matter how many times I have made it, I always feel that sense of pride and accomplishment every time the home made paneer turns out right.  So for those of you who want to learn How To Make Paneer/Home Made Paneer, this is the perfect time to do so.

The Ingredients For How To Make Paneer/Home Made Paneer:

Ingredients:

3 litres fresh, full fat milk ( you require full fat, fresh milk to make good quality Paneer.  The low fat/skimmed versions do not work)

1/3 cup lime juice or equivalent quantity of vinegar ( I have done both)

Method For How To Make Paneer/Home Made Paneer:

Boil the milk on high heat.  Make sure you are watching it with an eagle eye as it could over boil in minutes and create a mess.   When it starts boiling, lower flame and add the lime juice or vinegar.  Count to 30.  (If the milk does not curdle, add 1 tbsp additional lime juice or vinegar until it does). When the milk begins to curdle, stir the mixture for a minute and switch off the flame.  Place a muslin cloth in a large metal strainer or colander.  Place the strainer on a large dish to catch the whey. Pour the curdled milk into it and then gently wash the paneer in the strainer under running water to remove the vinegar smell (if using vinegar, otherwise skip this step).  Gently squeeze and tie the muslin cloth.  Place it under a heavy object to drain out all the water.  I place it under my grinder/mixer for one hour.  Use the whey to make breads or curries or a refreshing drink. Cut into cubes and use as desired.  Can be stored for 3 days in the refrigerator.
