Once upon a time, when we were very young, this used to be a great favourite of ours. Whenever we had visitors or visited others, the chances were that  Caramel Custard /Burnt Custard would be on the menu.  It was even served at hospitals like St.  Martha’s in Bangalore to the patients in various departments.  In fact one of the highlights of our little lives was looking forward to sampling the Caramel Custard /Burnt Custard when we visited our Granny when she was warded there for a few days.  Somehow, whenever we went to see her, there would be that delicious Caramel Custard /Burnt Custard waiting for us to share.  All we got was a nibble ( a couple of teaspoons each) as it was actually meant for just one person.  I was thinking about the good old days and felt like making it.  It’s an easy, least Weekend Dessert that’s a great favourite with everyone. It’s been ages since I made it. A few years probably and something that makes me nostalgic whenever I think of it.

The Recipe For Burnt Custard/ Caramel Custard

Ingredients For Burnt Custard/ Caramel Custard:

2tbsp brown sugar

Method For Making Caramel :

Place sugar in a small 5 inch cake pan and heat on high till it begins to melt. Lower flame and gently mix till sugar has melted. You may make it as dark or as light as you like. Do not let it burn. Remove from heat and gently swirl around – it should nicely coat at least 1/3rd of the sides of the pan. Keep aside to cool.

Ingredients For Making Burnt Custard/ Caramel Custard:

4 large eggs
2 cups milk
1 tbsp corn flour
2 tsp Vanilla essence
Pinch of nutmeg

Method For Making Burnt Custard/ Caramel Custard:

Whisk milk and corn flour together till smooth.
Whisk eggs and vanilla till well blended.
Add the eggs to the milk mixture until well combined.
Strain mixture into the burnt sugar/caramel pan. Sprinkle the nutmeg over. Discard the residue. Cover with foil securely.
Heat water in a steamer. When it boils, place the container in the steamer. Cover with steamer lid, lower flame to simmer and leave for 20 to 30 minutes. Make sure there’s enough of water to last half an hour. Cool and enjoy your Weekend Dessert.
