Something that I always have in my kitchen are over ripe bananas.  I used to throw them away when they became squishy and spotted and brown in colour until a visitor to my home told me about using it in cooking.  Since then I have used them in smoothies, ice creams, cakes, puddings and even in savoury dishes and salads.  Today’s recipe is  Banana Pudding which I came across while browsing www.pinterest.com, one of my favourite sites for recipes.  Since I had a bunch of over ripe bananas that had to be used up, I decided to make it, with some changes (something I always do).  It is one of the nicest recipes that I have made and the Banana Pudding was not only appreciated by everyone, it was over in one sitting.  And I have already shared the recipe with family and friends.  Viva la Banana Pudding!

The Recipe For Banana Pudding

The Ingredients For Banana Pudding:

450gm bananas (before peeling)

25gm melted butter

1 tsp vanilla essence

50gm jaggery ( palm sugar) or brown sugar

1 egg

60gm wheat flour

1 tbsp almond nibs

1 tsp almond meal

The Method For Making Banana Pudding:

Pre-heat the oven to 180°C.

Grease a 9inch round dish.

Blitz bananas and egg in blender till thick and creamy.  Pour into large mixing bowl.

Add the melted butter, vanilla, jaggery or brown sugar, and wheat flour.

Pour into the greased and lined pan. Tap gently to release air bubbles.  Sprinkle nuts and almond meal on top.   Bake for 45 minutes until golden brown or until skewer inserted in centre comes out clean.

Serve with cream or vanilla ice cream.
