Drunken Red Date Cup Cakes
After I made my red date wine this year, I looked at the wine infused dates and wondered whether to throw it away or keep it. I tasted one and it was so good. Hence, I requested my maid to chop them up, remove the seed and store it for one of my brilliant experiments. To cut a long story short, the cakes were so tasty that I got requests for the recipe. So, these cakes are going to become a feature in my house until they get over- all 3kgs of them. 😊

The Ingredients For Drunken Red Date Cup Cakes
125 gms butter
3/4 cup jaggery powder For those who do not know, jaggery is a traditional, unrefined sweetener made from the juice of sugarcane or palm trees
1 ½ cups wheat flour
1 ½ tsp baking powder
2 large eggs
1 ½ tsp vanilla extract
1 cup wine infused dates
Method:
Sieve the wheat flour and baking soda together 3 times. Whisk butter and jaggery till pale and fluffy. Add the eggs one by one, mixing well. Next add the vanilla. Add the flour, ½ cup at a time until everything is used up. Lastly add the wine infused dates and give it a good mix until well combined. Pour into cup-cake cases and bake in a pre-heated oven for 35 minutes or until skewer inserted in the middle comes out clean. The baking time depends on the size of the cup cake case. I used 3 inch sized cases which required 35 minutes. These are perfect for breakfast with a dollop of butter or as a snack to fill in those empty spaces.
