Happy Birthday To Me

I seldom bake just for myself—mostly for family, friends, or church. But every October on my birthday, I bake purely for me. This year, I found an incredibly simple yet delicious cake recipe featuring just two ingredients: green apples and dark chocolate. I pressure cooked 5 green apples for 5 minutes, peeled, and whisked them into a smooth puree. Then I melted dark chocolate over hot water and mixed it thoroughly with the apple puree. I poured the mixture into a greased 5-inch pan, refrigerated it overnight, and the next day, I celebrated with this light, mousse-like cake.

Ingredients

5 green apples, peeled and cored

100–150g dark chocolate

Instructions:

Pressure cook the peeled and cored apples for 5 minutes until soft.

Whisk the cooked apples into a smooth puree.

Melt dark chocolate using a double boiler (a heatproof bowl over simmering water).

Gradually combine the melted chocolate into the apple puree, whisking until smooth.

Grease a 5-inch pan and pour in the mixture evenly.

Refrigerate overnight to set.

Unmould gently, slice, and serve chilled.

Garnishing Tips:

Dust lightly with cocoa powder or powdered sugar.

Top with chocolate shavings, fresh mint, or thin apple slices.

Sprinkle crushed nuts for crunch.

I did not use any garnish. I preferred it plain as this is a very decadent cake

I served it as it is. You could

Serve with whipped cream or vanilla ice cream.

Pair with hot tea or coffee.
