Mysore Pak Baked Cake (With Optional Chilli Sprinkle!)
If Mysore Pak and a soft tea cake had a delicious baby — this would be it.
Lightly sweet, nutty, ghee-kissed and unbelievably fragrant while baking.
And thanks to MTR’s new chilli-flavoured Mysore Pak range, I added a tiny sprinkle of chilli flakes… and it was magic.



Ingredients
Wet Mix
- ¼ cup melted ghee
- ½ cup curds (yogurt)
- ½ cup jaggery powder or brown sugar
Dry Mix
- 1 cup chickpea flour (made from ¾ cup roasted chickpeas, ground)
- ¼ tsp baking soda
- ¾ tsp baking powder
- 2 tbsp almond meal
Additional
- ¼ cup full cream milk
- Chopped nuts of your choice (for topping)
- Optional: A light sprinkle of chilli flakes on top for a modern Mysore Pak twist
Method
1. Whisk the wet ingredients
In a mixing bowl, whisk together:
- melted ghee
- curds
- jaggery/brown sugar
until smooth and creamy.
2. Add the dry ingredients
Add:
- chickpea flour
- baking soda
- baking powder
Whisk gently until lump-free.
3. Add almond meal and milk
Mix in almond meal and full cream milk.
You should get a smooth cake-batter consistency.
4. Prepare your pan
Grease and line a 5-inch round pan.
Pour batter halfway up.
Sprinkle chopped nuts.
(Optional: add a light chilli-flake sprinkle.)
5. Bake
Bake in a preheated oven at 175°C / 350°F for 30 minutes,
or until a skewer comes out clean.
6. Cupcakes
Pour the remaining batter into two 3-inch cupcake cases.
Bake for 15 minutes.
Result
Soft, aromatic, slightly nutty, Mysore Pak-like flavour without the heaviness of ghee-laden mithai — and that tiny touch of chilli? Absolutely irresistible.
