I came across this Hong Kong Fish Recipe during the Pandemic and loved how simple it was. However, I changed it to suit my preferences for cooking and absolutely love it since we are fans of all kinds of Chinese food. The Recipe For Hong Kong Fish Recipe:

Ingredients For Hong Kong Fish Recipe:

5 slices seer fish

salt and pepper to taste

1 tbsp Shaoxing wine

1 tbsp corn flour for coating sliced fish

1 tsp spring onion (use the white part only) sliced

1 inch ginger, julienned

1 stalk spring onion, cut fine for garnish

Sauce For Hong Kong Fish Recipe:

3 tbsp light soy sauce

2 tsp dark soy sauce

3 tsp brown sugar

1/2 cup water

1 tsp sesame oil

pepper to taste

Mix together and keep ready

Thickening For Hong Kong Fish Recipe:

1 tsp corn flour

2 tbsp water

Method For Hong Kong Fish Recipe:

Wash fish and wipe dry with kitchen paper. Season with salt, pepper and wine. Marinade 10 minutes. Sprinkle corn flour on to fish. Keep aside.

Heat oil in the pan. Saute spring onion (white part) and ginger for a minute. Add to the sauce and keep aside till required.

In the same pan fry the fish over medium-high heat until both sides are golden brown and cooked through.

Add the remaining fish marinade to the sauce and whisk to blend.

Add to the sauce and pour over the fish. Bring it to boil. If required add the thickening at this point. If not, leave it out. I don’t usually require it as the marinade is thick enough. Garnish with green spring onions or coriander and serve hot with white rice or a side of vegetables.
