
One of our happiest times as children was when we visited our grandparents during the summer holidays. Summer was the time we got to eat as many mangoes as we could because our grandparents had a number of mango trees growing in their compound and other propeties. We ate so many varieties in all forms- raw, fresh, ripe, unripe, cooked, pickled, as salads and as desserts. I don’t think I have ever eaten ( or ever will ) that many varieties and the mango will always remain one of my favourite fruits. During summer, we sometimes lived on Mangoes from breakfast to night and this Easy Mango Fruit Salad/ Summer Salad/ Fresh Dessert will always be one of my favourite desserts.
The Recipe:
2 very ripe bananas; 1 cup low fat milk; 1 large, ripe mango, cubed; a pinch of cardamom.
Blend the bananas, cardamom and milk to a smooth consistency. Pour over the cubed mangoes and enjoy cold. Garnish with a sprig of mint. Eat within 24 hours.
