64th Birthday Cheese Cake/ White Chocolate Cheese Cake

This post is a bit late as the 64th birthday has come and gone. Yes, I did manage the birthday greetings and bottle of wine and also a 64th birthday cheese cake / white chocolate cheese cake that looked absolutely wonderful and tasted great ( or so I am told) as we did not get to eat a crumb. We were able to admire it and photograph it before it was boxed up and taken to the office for Nehru’s colleagues.

In lighter vein, when I did an assignment on growing older while in college, I never thought I’d actually be singing the Beatles song and buying a bottle of wine for my husband. It was all so distant, in a far away land, literally beyond the rainbow. Back to reality, I am glad I have not lost my hair. And neither has my spouse.

I am just including the Lyrics for old time sake and then on to the recipe.

The cheesecake is similar to one I made some years ago using dark chocolate. I used white chocolate for this cake.  For those of you who want to try it out here goes…

Three Ingredient Cheesecake

The Ingredients For 64th Birthday Cheese Cake/ White Chocolate Cheese Cake

500 gms white chocolate)

500 gms cream cheese

10 large eggs, separated

icing sugar to sprinkle on top

For Filling:

1 cup whipped Cream 

 800gm tin of black cherries

For Topping:

Tinned black cherries ( liquid not required) – divide into two portions

5 ginger nuts, crushed

Method For 64th Birthday Cheese Cake/ White Chocolate Cheese Cake:

Melt the chocolate in a double boiler stirring all the while.  Add the cream cheese and keep stirring till thoroughly mixed.  Remove the bowl from the double boiler, add the 10 yolks and mix well.  Beat the whites to a stiff consistency and add to the mixture little by little.  Pour into two greased and lined 9 inch round cake pans.  Pour some hot water into the tray on which you place the pan in the oven.  I poured 1 cup.  Bake in a preheated oven at 170 Celcius for 15 minutes, 160 Celcius for 15 minutes , then switch off the oven and let the cake cook in the remaining heat for 15 minutes.  Cool and un mould the next day.

Place one cake on a cake board and spread half the whipped cream on that. Arrange half the black cherries on the cream. Place the second cake on top and spread the remaining whipped cream all over. Arrange half the cherries on one side of the cake and sprinkle the ginger nut crumbs on the other half. Refrigerate before slicing and serving. You may sing the above song if you wish.
